I’m taking a page from Trent’s book and posting an easy recipe every Sunday (well we see how long it lasts), but here it is:
Chickpea and Broccoli Curry: super easy and cheap
Prep Time: as long as it takes to chop onions and mince garlic
Ingredients
Garlic
Onions
I jar Chickpeas (Garbanzo Beans)
I tin chopped tomatoes 8 ounces (may need a larger tin depending on the consistency)
1 small tin tomato paste
Defrosted Broccoli as much as you want (I prefer this over fresh as it’s less messy)
Curry power 1 tea spoon careful not to add to much
Scoop beef base
Fry garlic onions when cooked add chickpeas tomatoes and broccoli (if broccoli is frozen add with chick peas if not than few mins latter). Simmer till warm. Serve over Rice.
Main negative to this recipe is it’s hard to scale down, i.e. wife and I. On the other hand, be a great recipe for someone that has to feed 5 teenagers.
EDIT: note Garbanzo beans need to be rinsed ![]()
